How do you get to that conclusion from what I wrote?

The phone is plugged in at night, usually around 23h00-00h00 and comes off charge around 06h00. If I have a heavy usage day and the battery level falls to around 30% I will give it a top up charge to get through the day.
Sorry, English not my main language... sometime it's get difficult to get people:

"under 30% if I can help it (I'll do a charge during the day if I have to to ensure it doesn't)"

I saw a video time ago a YouTube saying that if he can, I give to the phone charges through the day no matter what. Meaning this like,... if he was cooking, he charge it, then if he was in the computer, he recharge again... obviously, those were little charges (via Qi for comfort).

No problem there, I'll bet your English is infinitely better than my ability in your language ;).

I don't go that far with charging, I just don't like it to get too low, one other thing I don't do is wireless charging, I noticed the phone always gets hotter when charging wirelessly and as everyone knows, heat is a big enemy of the battery.

Sheesh. my iPhone SE 2020 from 100% to 99% and it’s like not even a month. What’s happening? I took care of the way I charge this phone. I got this on November 27, 2020 and just today I check it’s already 99% maximum capacity. Anyone experienced this?

It's an estimate so it's not always exact. 99% is still basically right around the full capacity as far as an estimate goes.

It is a lottery. I have a 11 PM since February, and it is still at 100%. Friend of mine has a 11 PM and his battery health si below 95%.

The best advice I can give is to use a 5W charger. Your battery won't degrade fast. Only from Apple.

Entropy is the law of the land. Just enjoy your device. It won't last forever.

Since updating my 2 months old SE 2020 to 14 and subsequently 14.0.1, the battery Maximum Capacity has dropped from 99% to 97% in less than 2 weeks.

Has anyone else experienced this? I took care when it comes to charging (20% to 80%), and it's shocking see this while other users report 100% after almost an year of use.

Come on man...shocking? Really?

Don't think about it, just use your phone and be happy :)
 
One cannot just go by age and battery capacity %, but also take in account usage. The more often the phone is used, the more often the phone will need to be charged, which would degrade the battery quicker.

I will say again, it is lottery :).
The behavior that is happening could easily be due to usage habits.

In 2019, my wife and I got iPhone SE1 at the same time.

I hardly use mine, with about 20min-40min average daily screen time. My SE1 currently is at 97% battery capacity.

My wife uses her SE1 all the time with about 6 hours of daily screen time. Her SE1 currently is at 85% battery capacity.
 
Then mine battery health would be below 90%... because I use phone all the time (gaming too). That is not the reason...
What iPhone do you have? What is your screen time average? What is your current battery capacity %?

There could be other reasons as well, like I would bet that the % are just estimates. Also, HW issues caused by cheap chargers could be a part of the problem as well.
