FWIW using MSI's Afterburner monitoring utility in Windows, I've been able to measure the temperatures on my D300s.
With intense gaming, the GPU temperatures increase steadily up to 85 C, then at exactly 85 C the fans kick into high gear and stabilize the heat. I've never seen the temperature go above 86 C, which should be safe for these cards.
I expect the D700 has a similar fan profile.
