Considering iPod_Touch 16GB/3GS

Hi everyone.

I'm considering coming on-board due to playing lightly with my wife's iPod Touch I bought her last month. Her birthday present. She finally has a toy that I want!!

K I'm new to all this Jailbreaking stuff. I'm also coming from an S60/Symbian background in my choice of smartphones, so I've got a few questions.

1. what is the easiest Jailbreaking software to run in WinXP Sp3 to do the break?
2. After Jailbreak, can I get the following Bluetooth functions:
A2DP with remote able to control playback/volume, track selection & scrubbing?
- Also which A2DP headphones work? My choices of preference are SE HBH-225/205's or Jabra dogtag like A2DP sets.
3. Is multitasking available after Jailbreaking?
- I don't mean push email in the background while I listen to music. I wish to use Safari on either 3G/WLAN and also use JoikuSpot enabling my 3GS as a modem to a laptop or other smartphone using their wlan radio, and be able to receive emails, listen to music and occasionally switch to a memo/Ebook to read; all simultaneously.
4. Is there a EBook application that'll allow me to read my pdf ebooks natively and allow for bookmarking my page, copy text to memopad, and allow for highlighting text to be saved?!
5. Is there an application allowing that OS X feature "Stacks" in the dock to organize your choice of Application organization, documents, etc.
6. Can you use iPod Touch/3GS as a native HDD and transfer the Documents (MS Word/Excel/PPT/txt/xml/xhtml) and read these later on the device??

Sorry guys for all the questions but I'm really liking multitouch and the iPod_Touch/3GS' speed.

Oh one more thing. Multitasking switcher/launcher after Jailbreak - is it the same as pressing the home button to do so?

Che ... thank you VERY much for quick answers. Looks like its time to tradeup my Nokia E71 and for the iPhone 3GS (16/32GB). However I'll be buying it unlocked from Apple or retailer and going price is $600-700 for the 16GB which will do fine for me. I'm already aware of the hardware and its capabilities. I think this will go well with my upcoming MacBook and musical tastes and aspirations. Should anyone have any more suggestions this would be great. already got a case picked out.

try stanza for #4. it doesnt read PDF natively, you need to copy it using the stanza desktop app.
 
i really want to know what that theme is. that is really nice i like the small icons.

Thanks for the info on ilocalis. This is what Ive been looking for. My mobile.me trial period was about to expire and I have no need for mobile.me's storage or email and with apples overpriced find my iphone feature using mobile.me this app is allot better and allot cheaper. It has a 10 day trial period and so far is working really well.
 
im noticing a lot of people with a black dock, how can i get that? i know you can use winterboard, but i dont want to use that. i got reflective dock already with five icons dock, but i want to get rid of that cheese grader looking background.

Bosspaper will let you remove the dock without winterboard
 
I'm surprised nobody mentioned this:

It's a very cheap/free alternative to mobile me's Find My iPhone. In fact, it offers a lot more features than Find My iPhone. Even the free version allows you to track via GPS. Wish I had it a month ago when I lost my first 3G.
