I don't really like tablets since it's too big for portability like a phone, and it doesn't do as much as my laptop, and I'd rather type on a physical keyboard.Phone for me since it comes everywhere with me.

Personal: Addicted to Civ 6, which seems to be pretty computing-resource intensive.
Also, basically everything else— browsing, email, whatever. I have a Mac Mini, which i do use together with the IPad during work hours only. But the IPad is really the one device i can’t do without.
This year upgraded all my devices including my appleTV, except my MacBook Pro which is only 2 years old and cost the most to upgrade.Depends how you're using your devices really. I prefer to keep my phone updated every year or 2, where as the rest of my tech is usually 3+ years for their life cycles. My phone sees the most usage though so I like having that the most up to date tech.
Whichever you use the most, should be your most up to date tech if thats all you can afford to update at once.

Why would apple do that when a MacBook Pro costs so much more?Faster phone, easily. I have no patience for slow phones. When I'm out and about and want to look up something I want it instantly.
My iPad Pro is 4 years old. The most intensive thing I do on it is Affinity Photo. And it does it fast enough.
I do all my actual work on my Mac.
If iPadOS was actually as powerful as macOS, then my answer would be totally different.
