So what happens with Camera+ and 4.1? Will it lack the HDR option leaving us with the default camera? :(

No, camera plus cannot utilize photo functionality that were not available at programming. Camera+ would have to be upgraded to do that assuming that an API for it exists. The only program that does this feature is the camera app.
 
HDR function with the basic Camera app in 4.1 makes the multi-touch focus/exposure trick in Camera+ less useful now. You can focus the basic Camera at a darker area and turn on HDR to get a good image. The editing functions still are fine, of course. However, I'm starting to look at other apps that have more effects and editing than Camera+ provides.

If you taking pictures of a static subject, sure. But if you're trying to capture something that's moving, HDR isn't going to be much help.

You're correct. Apple's new HDR does take 3 exposure-bracketed shots very quickly. While the results may vary, the technology behind it is pretty cool! I did some test shots for the blog with the new HDR and a moving object and there was ghosting and artifacts.

Sadly, I don't think there's anything close to Camera+ in terms of features, UI and "reload" times. Lately, I've been using ProCamera because I like the way the split focus and exposure are done -- less finger dancing on the screen. And I've been using Apple's Camera a lot and just apping elsewhere.

Is it possible to get Camera+ do geo-tag your photos like the stock camera app does?

No, as when it was pulled, there were no APIs that allowed it to do that. Now that iOS 4.1 is released, it is possible, but they'd have to update their app.

In the mean time, you should check out my app Camera Prime. Update coming out VERY shortly which will add geotagging ;)
 
Is there anywhere I can get the camera+ app version with the volume shutter? Would anyone care to give me a copy:)
