iPad Pro plus Apple Pencil replaced both pen and paper notes and typed notes for me a long time ago. I use it with OneNote, Notability, and Notes. I love having my notebooks in a device that’s actually shaped like a notebook.
 
I use my Pro 10.5 for a lot of different things but lately I’ve been using it for note taking more and more often. I got the pencil many months ago but mainly used it for navigation. Now I’m trying to get the most out of it so I take notes for fun every chance I get... plus a little sketching here and there. I use the Notes app that came with the iPad...

For me, I like taking notes on iPad more than with paper and pen. I like everything digital though, ebooks vs real books, tablets vs. newspaper or magazine, etc...

But I recommend the iPad+pencil for note taking highly...
 
I use iPad 2018 + Apple Pencil to write my notes. I write with my Apple Pencil with its tip covered in a silicone pencil tip cover (costs about 5 - 10 euros from Amazon), to dampen the sound of the Apple Pencil against the iPad screen, and to give a somewhat better grip against the surface (so I don't feel that the surface is too slippery when I write).

It has been working very well for me so far. I can use my iPad in quiet places like the library as well as my lecture hall. The Apple pencil no longer has the annoying tap-tap sound against the iPad surface.

I really did not like the 2018 ipad. I upgraded to a pro for about $120 more and haven't looked back. A Matte screen protector will go a long way in providing a better drawing/writing surface though.
 
It's totally replaced pen and paper for me. I'm in wealth management and I keep all notes from client meetings on there. I tend to lose paper notes, and I know I won't lose a $900 iPad. I recommend Notability.

I guess it all depends on how you use it but I've left pen and paper in the dust.
