I'm wanting to do the same thing...... Thanks Apple......
See my reply from October 16. I tried connecting a 1920 x 1080 monitor using a USB-C to DisplayPort cable to the back of the Studio Display, and it does not work.

All I can tell you is my friend has a Hd quality monitor hooked up to his Studio and it works fine. Display port input. And it’s surely not an Apple display. He’s a photographer and would not buy a Apple display if you paid for it.

One 5K display is the equivalent of FOUR original Thunderbolt displays.
pixels yes, size no.
Two Thunderbolt displays can display twice the amount of text that a 5K display can for normal view distances. The 5K display just makes it look sharper.
Many people still use non-retina displays.
