When setting up the rule, at the bottom of the condition options list is "Edit header list...". Can add "Reply-To" there and will be one of the options to pick from going forward.
Hmmmm.. maybe I'm using an old version of mail but I don't see that option? I'm on OSX10.12.6 and my Mail version is 10.3.

To use different header fields in conditions, choose “Edit header list” from the bottom of the first pop-up menu. To add your own header, click the Add button in the Message Headers window.
In short, click the first pop-up (shown as "From" in your screenshot), choose "Edit header list" from the bottom of that menu, then add the header.

Ah! Ok! Great! Got it, have added a "Reply-To". Thanks much! :)

As above, I have been getting 50 or so a day. I have written a rule which doesn't really work as everything still winds up in the Junk folder.
Automatically deleting everything in the junk folder would also catch legit emails that got erroneously marked as junk.
If I make a slight change from .reg.ru to reg.ru and click done, I am asked do I want to run the rule and when I click in yes the rule runs as expected and all of the reg.ru emails go from junk to trash. The next day the "new" rule doesn't work but when I make a slight change to the rule it flushes out those files from Junk.

I'm curious, what is the problem with them ending up in the junk folder? That seems like where they should go. I assume you periodically go to that folder and delete the contents. What is special about these that they must be deleted immediately?

Does you mail provider offer server-side rules? With outlook on my work account, I use such rules to check senders and then do things like send to trash.
