Do we have to turn off the option for videos too?

Deep fusion is for photo processing only. Deep fusion needs image stabilization so it can only work on the telephoto and wide camera but not the ultra wide. Capture outside the frame feature uses the ultra wide camera to capture the additional image. Hence why you need to decide one or the other.

I don’t think video setting would affect deep fusion. Can someone with more knowledge confirm or correct me on this?
 
Really wished they'd give us the option to leave Deep Fusion on at all times, taking photos in all types of scenarios such as bright, medium and low light.

That’s not how it’s supposed to work though. Deep fusion is there to help with medium-low light photos. Night mode will do much better in low light. It will change depending on the lighting. It would be nice with some kind of indicator same as night mode. But I think the problem is when Apple announced it people thought it was a thing you switched on. But Apple just wanted to mention they had a new machine learning algorithm that will help when taking photos.
