I actually ended up selling my rMBP today. I'm going iMac 27", iPad Air 2 and iPhone 6 for now. Giving it a try!
After my studies, my needs have changed. I started my career and received a company issued laptop. Also, sitting in front of the computer all day in the office, I much prefer picking up my tablet to check the web and a bit of social media in the evenings. My iMac handles all the serious work and is great for doing so.
I still think this is an interesting conversation, as everyone has different needs and use-cases. Feel free to continue sharing your examples below if you wish!

After nearly three years, I can say that the iMac 27", iPad and iPhone combo worked well.
The iMac was fantastic for productivity, with its large display. A great computer for those GoPro edits and larger photo libraries. For writing and research, I really enjoyed the ability to have three word documents side by side, or Safari and Word. Having plenty of internal storage for everything was also valuable, of course, even though this was the last HDD-based computer I'll ever buy.
Now, there were times when I missed having my previous 13" MacBook Pro. With the iMac, you're obviously tied to a desk at all times, which, for me, helped productivity. For non-productive work, I was expecting the iPad to be enough. It wasn't really.
The iPad is my absolute favorite consumption device, but the moment I want to write something longer than even a few sentences, I did miss having a proper keyboard. Moreover, there are still websites and apps that are poorly optimized for iPad and/or lack the functionality you have come to expect from the desktop version of the site. In those cases, I didn't head over to my office and fire up the iMac - no, I simply decided to avoid the task I was doing. I have given up the idea of replacing a laptop with the iPad for now. I will give it another go in a few years, assuming macOS and iOS continue to merge.
The iPhone of course, I can't do without.
Moving forward, I will hopefully be moving into a new apartment shortly, closer to the city. Space will be more limited so a big desk setup with a 27" display won't be given priority. Instead, I look forward to adopting a more minimalistic approach by going laptop, tablet and phone.

2018 MacBook Air, iPad and iPhone.
The new MacBook Air has been a fantastic laptop experience so far and feels way more modern than my previous iMac and MacBook Pro, thanks to Touch ID, the new blazing fast SSDs and being completely silent and cool to the touch. Battery life is insane.
I got a great offer on my iMac, so decided now was the time to sell. When they adopt a new design with thinner bezels and SSDs standard across the board, I might get another, but for now it started feeling a bit long in the tooth.
