Plex is great because if you want to go offline it will encode the files for your specific device (and you can adjust size/quality). I have a 256 GB iPad but I think I could squeeze by with 32 GB if I needed to. I only got the larger size because I intend to pass this device to other family and I know those people will need a bit more storage than me.
I actually pre-encode my videos and keep "mobile" versions (720p 3Mbps or 1080p 10Mbps) on my server (HDD space is cheap). These are also synced to 2x 4TB portable HDDs which are ready to go anytime. Making Plex do the transcode when I need to load up my devices is just way too slow. I know Plex can also do pre-conversions but I prefer having greater control.

That works too and HDD space is, indeed, cheap. One thing I do is encode the full quality files so they're compatible with my iOS devices. So if I cannot wait for Plex I can just drag and drop them onto the device (more or less).

Plex does encoding fast though. I have a 5th gen. i3 and I can re-encode a movie for my iPad in an hour. What I do when I know I'll be out is the night before just queue up a bunch of stuff in Plex and by the time I wake up it's all ready to go.

I know Plex can also do pre-conversions but I prefer having greater control.

The best workflow is the one that works for you.

Lol, I copy entire TV series to my mobile devices in one go. One hour for one movie is way too slow. I need to be able to copy as fast as storage allows. :p Sometimes, I don't even have time to do that hence ready-to-go portable HDD + either laptop or RAVPower Filehub. :)

I always keep full quality Blu-ray rips (30-40GB a pop) on the server. This is also the version that gets served to HTPC clients. I made the mistake of converting my DVDs (some not yet and probably never will be released on Blu-ray) to AVI Xvid and had to re-rip them for conversion to MP4 H.264. That's a lot of time consuming manual labor I had to do all over again. Currently, I still convert my videos to H.264 but I'll probably switch to HEVC eventually so having the originals mean I can just queue them in StaxRip, MeGUI or Handbrake and let the machine do its thing. Also makes reconversion easy in case the first conversion is crummy.
 
Went from a 32GB Air to a 256GB 10.5. I use about 50GB, but that includes ~20GB of downloaded Netflix I watch on the bus.

I barely use 200GB on my MacBook Pro, although the capacity is 512GB. I used to have all my media on the internal storage and was forever upgrading my hard drive, but now it's on an external drive and honestly I rarely touch it. Netflix, Amazon Prime, iTunes rentals and Spotify have basically replaced my need for downloaded media.

I could easily get away with a 256GB main laptop if I didn't need Xcode, After Effects and Photoshop. Combined, they probably take up close to 100GB when considering cache, simulators, plugins etc.

128GB would really be the sweet spot for my use for an iPad but oh well.
