Have you looked into the top end Mac mini?

Mac mini is out of my decision. Here's why.

1. Cooling performance
It always throttles and overheats due to poor CPU cooling system. This is why the bigger computer has a better cooling system like Mac Pro 2019 since Mac is well known for having a poor cooling system. I tried editing with iMac Pro with 8 cores and yet it throttles too. I doubt that Mac mini can handle it since iMac Pro barely handles it. I would NOT buy a Mac mini just because of this.

2. Accessibility
Technically, you cant open Mac mini. There is no way to add more RAMs. Even I can, I can't risk losing my warranty with Apple care.

3. GPU
It does not have GPU inside and it is much expansive to pay for eGPU and the performance is 10~20% lower than a GPU in a desktop. Also, that's one of the main issues with Mac Pro 2013 that you need to expand and upgrade externally. TB3 does not cover PCIe 3.0's performance.

4. Price
For its price, I would get iMac. Simple.

5. Storage
It doesnt provide RAID storage. End of the story.
 
It's an untapped market and been that way for years. These are the ones that go hackintosh. If Apple sold a machine like that for $1750-2500 base, it would sell very well. It would also impact iMac/Pro sales...

I'd be first in line.

The 5,1 is still quite capable of filling that role of an affordable but expandable Mac Pro if Apple/Intel just made Catalina work.
