Would you guys say 24 inches is the sweet spot for document work? I kinda find looking around a 32 inch screen tiring when reading.
The resolution you use will impact this greatly. I run my iMac at 2048 x 1152. Makes a world of difference and is perfect for my eyes. At the default resolution I found items too small.

I personally think 32" is the sweet spot for browsing. Document work depends on multi docs or not. For single docs 24" is probably just fine.

Why don't you set the 32" 4K to look like 2560x1440 retina equivalent? Should be pretty much perfect at that size/resolution. On my 4K 27" that resolution makes everything too little, on the other hand 1920x1080 makes everything a little too big.
I think a lot of people don't alter the resolutions of their displays (when not happy with default) which is a big mistake.

Big Sur and this 32" 4K does not give me any scaling options other than larger text which really blows up the display...

I wish I can choose 2560x1440 but I don't see it:

Over 30" is not for majority of people...

Then they can buy the 24" The rest of us will buy the larger one. If they don't go bigger than 27". I'll be skipping another iMac in the future and go with Mac Mini + my own larger display.

There MAY be a chance that they'll have an "iMac Pro" with options for 27" AND maybe one larger one at a premium price.

Seem like more people like 24"
Yes, I use a 24" Apple Cinema Display at work to a MBP and love it - it's not a Retina, but the Apple display has the same fonts and type pitch of a Macbook or iMac.

3 more days and I will be opening up the new 24" iMac and connect it to my 24" Cinema Display to see how that would look side by side......
