OP, that's a lot like the touchscreen systems we used at Chick-fil-A last time I worked at one in 2001. It sure as hell beat the button-searching old things we used when I was in high school.
This sounds like a good idea since you could see pictures and full descriptions of items. Touch an item and a pop-up shows up with anything you want, including nutritional information if available. This would be a neat idea for a high-end restaurant to try in a few locations. It would probably be more realistic for a big company to develop an app you could download, have an open WiFi connection in the restaurant, and then you can do this yourself at your table.
For those who question why would you still need a server, well you still need someone to bring stuff to you. It would also allow the restaurant to give you way more information about what you're getting and possibly allow fewer servers to cover the same number of tables. If everybody placed an order via an iPad, the servers could spend more time bringing things out, refilling drinks, etc., instead of standing around waiting for clueless people to think and ask questions.
I like the idea myself, but I think it's too early to do it using an iPad. It might take a couple of years so tablet devices become more prominent to be a worthwhile investment for more than a few companies.
