Canada, eh?
I'm happy for the excitement of the OP but I have to agree that it means nothing in the long run. Lots of people do things at work that they can't talk about, that doesn't necessarily mean it's glamorous or exciting -- or the Tablet.

I work at such a company. Strict security clearances, NDA's, and I can't tell you what I do. Doesn't mean it's exciting though.

So basically the story was...

Guy goes to Apple Store.
Guy sees two employees talking.
Guy hears employee No. 1 say, "I'm can't tell you what I'm working on."
Guy suspects tablet based on this, although it could be literally anything.
Post on MR.

How exciting.

It's prolly John Appleseed... All those apple employees calling him all the time... He's must know everything at this point.

Okay, this was hilarious. Do a Google Image search for John Appleseed and he's pretty much everywhere.

"Hi, I'm John..."

Why would the guy reveal who he was?

Seems like most people in that position would want to be incognito so as to get an idea of what the environment was like for a regular customer.

Well .. I know that when I used to work at an Apple Store, customers would constantly ask about rumors and even when I said I had no idea, they would always take that as me being "coy", as though I was pretending not to know something when I did. "Oh I know you can't say anything...But I know you know!"

So...you never know but don't assume too much.
