I use a mix of Simplenote, Notability, Pocket, and 1Password. Simplenote is great for typed notes, easy to use, good tagging, etc. Notability is my favorite for handwritten notes, Pocket is easily searchable for links, and 1Password keeps my passwords and other secret info secure.

I use Joplin to sync notes across my devices. It is updated regularly and notes can be easily encrypted.
I just have to quote this again and thank @colshine for this recommendation! Joplin is essentially the Notational Velocity w/folder support that us NV fans have been wanting for years. I've installed it on my iMac, iPad, Fire HD 10, and Pixelbook and they're all working nicely together.

I've been using Bear for note-taking and Keep It as my "junk collector". So far, it's been a great Evernote replacement combo and I've grown to like having notes and "other stuff" separated.
