I don't know about Parallels accepting a macOS system install. I don't use Parallels, but I have always heard that the only Mac system that is supported by Parallels is Snow Leopard Server. I'm probably wrong on that, I just have no recent knowledge...
** make the bootable USB installer.
I use the same steps multiple time a day, I know it works, and I even did one when I was typing this in to make sure the steps are in the right sequence...

Thanks for that! I managed to find an 8GB stick in the end, but what about using a partition on an external USB HD for the 16GB?

You can use any Mac OS Server software in Parallels up to 10.6. After that there's no server DVDs so you can use the ordinary Mac OS. I have Parallels VMs for 10.6, 10.9, 10.11, and 10.12. Now I need one for 10.13.

Absolutely! All you need is a disk with partitions that are of the right format.
I have a small "gadget" box filled with (mostly) 8GB thumb sticks, a complete set of every macOS installer that I keep - Tiger to Monterey.
I am holding an SSD, 256GB, with 16 partitions, each with different version macOS installers. I can install anything from 10.5 Leopard to 12.1 Monterey, each bootable from that one SSD.
I also have another SSD - 512GB - with the same systems, but fully installed on individual partitions. I use it daily to help troubleshoot issues on a variety of Macs. The systems are configured the same, as much as possible, with a small amount of utilities on each, slight differences because of software compatibility, but similar in use. Comes in handy all the time, as I can boot with a basic, clean system on any Mac that can boot to a USB drive. It's very versatile.
And, both drives are on external enclosures for m.2 sticks, so quite small, simple to travel with. I greatly prefer the external m.2s, as they are much faster than the usual thumb drives.

Currently creating a bootable High Sierra installer via Terminal, on a new SSD partition...

Wow, that was quick!

It's a proper installer, as double clicking opens the usual install dialogue, e.g. asking where I want to install H S. The downside is that Parallels still doesn't recognise the install app and comes up with some fatuous message along the lines of "No operating system detected", which is just bilge.

Still at least now I know that I have the ability to upgrade to H S should I ever feel the need. Many thanks. 😊

Every OS from Lion onwards is available ... except Mavericks. I wonder why?.
I checked the official the Official "Apple Support Community" and they're recommending people to NOT make use of unofficial mods to their Macs like Open Core.

I'm not sure if users on Macrumors are aware of Apple's official stance on this?

That's just being deliberately obstructive - OCLP is highly regarded by tech pros and their website has warnings about each OS in relation to each Mac and what problems or limitations users will encounter. Apple just want to sell more devices and allowing users to prolong the life of their well-made Macs by extending the OS they can run, is not in their playbook.

Thanks for your reply MacBiter!

But why is this different for iPads software updates? I received an update for my iPad Mini 3 that I bought in 2015 so it's older than the Macs that aren't supported anymore and its hardware is obviously much less powerful... 😢😢😢

What will you do when you need to ask Apple for software/hardware help with your Mac?

I wish I could get an official update for my older Mac... 😭
