64 gb iPad Air 3 (2019 10.5 inch) with the A12 bionic or the 2017 model 64 gb iPad Pro with the a10x?

That's not the question, really. But, the 7th Gen will be positioned below the Air 3 so it'll be inferior than both these models, assumably?
Inferior? In my opinion, no. The value of the regular model exceeds the Pro and Air, in my opinion. The display to me is also excellent. The 7th should compete well with these models.
I get that that's your opinion and all, but technology wise, it's inferior technology. You might find the value proposition high enough to prefer it over the models you see as overkill, but I think technologically inferior is a totally appropriate, and debatably factual way to describe the other models in the lineup today.
Technologically inferior? The base model processors are plenty fast for the majority of users. The display is as good as laminated to me. I get you're enamored by Apple loading up more expensive models with technology. But the question is whether it's really needed or useful for many or even most users to justify that significant increased price point. If you're willing to buy into that approach and you feel better having more technology for its own sake, then that's another story.

Good as laminated to you? That's fine, and to be honest I find it okay too. But is non laminated better? No way, laminated screens are technologically superior and improve the display being able to do it's job - inferior to laminated.
There's an argument that some of the technology isn't worth it, but that's a personal belief held by people like you. There are people out there (I'm not one of them) who are paying every year, top dollar for the latest and greatest. Apple has tough competition. People don't pay premium prices for inferior or outdated technology. They have to push the bar forward. And yes, they're going to market it. And yes, it works and more people (with the means) will choose the superior products up the line if they 1) need it, and 2) can afford it.
Generally, people buy the best they can afford, and they feel good about it.
But, the term inferior, when it comes to technology, is particularly relevant when making comparisons between products like the iPad. The 9.7" is inferior to the 10.5 Air, which is inferior to the Pro models. Simple as that.
Your personal opinion on whether it's worth it is completely valid, but factually speaking, the more expensive models are technologically superior. And stating your opinion on that is fine, but you might as well believe gravity doesn't exist either - it won't change the facts.
I like the 9.7 iPad 2018, it's good. Will I buy one? Well, to be honest saving money is tempting. But not being able to see it well in the sunlight or in the office with glare, that's a big deal. Two generations slower, it's okay today but next year and the year after it's going to struggle. Less ram will mean having to wait for things to reload when multitasking. The cameras are worse, so no point buying it for that. No P3 colour gamut to enjoy rich content. You see, to a lot of people, these improvements in the Air 3 (and further more with the Pro models) are actually incredibly useful and worth the money. It's only £180 more for the Air 3 in the UK. I'd kick myself for not spending the extra since I value the features. Different for people who can't make that jump, and it's good they have a great option. But if you go around making silly statements people will call you out on it. some things are facts.

I don’t know that it’s a given or guaranteed that all pro’s have (will get) bright spots. Mine hasn’t succumbed “yet” but, yeah, there must be tens of thousands out there unaffected though.I'm going to get the 10.5 Pro. I don't mind the white spot.
Now, that's a steal. Despite lacking some features of the Pro, I don't think I'll regret it!
