Actually, no. They can kill a particular app if it turns out to be malicious (i.e. a virus). They can't just "zap" your device, whatever that means exactly.
I don't like physical computers because they limit me to apps that actually exist. I much prefer the computer that's in my imagination; it can run anything.
Kind of like the HP Slate! Or even better, the MS Courier. Which is like, SO much better than the iPad, according to one of my students.

I don't really get this problem with Apple locking you into what they approve of.
There are over 150,000 apps available on the App store, which between them provide more features and uses for my phone than I could ever have imagined possible 2 years ago. What are people wanting to do that they can't do with any of those 150,000 apps?

dude, that's far worse than anything Apple has done. That would mean that Apple would lock down all jail broken phones. Apple isn't stupid. Microsoft is, they lock you out of XBOX Live if you tamper with your XBOX.
