I would like to see:

An FPS, something like Timesplitters. Halo gets all the glory. I'd love to see a sweet Timesplitters game. But any FPS would do!
A Twisted Metal game would be awesome. They could implement controls like Crash Nitro Kart.
A fighting game, like Tekken, with few "hidden" buttons and touch gestures.
A Resident Evil game. Either the old fixed camera angle or a new behind-the-shoulder game would be fine.
A sidescrolling Mario game!
A Guitar Hero game. Not like Tap Tap Revenge, but one where you hold the iPod/iPhone in your hand like you would grip a guitar neck.
A Final Fantasy VII or IX port; that would be AMAZING.

there are games like it around but nothing as good as the actual text twist. that would be a great game on the iphone. The UI is perfect for it.

The one that baffles me as to why it is not there is Peggle. They already have it for the iPod.

Oh another goodie would be Puzzle Quest.

And I too spent way too much time with Castle Wolfenstein (the originals) on my Apple IIe. I can still hear the SS troopers screeching HALT! KOMEN SIE! Give me the chills thinking about it.

Age of Empires or some sort of RTS.
Sim City (even the first version, or a clone or something?) I love that game.
A good turn-based strategy.

What we need are some good strategy games. Action/racing/adventure aren't the only types of games people play.

ooh..Spaceward Ho. I forgot about that game.

Many hours trying to Appletalk network a room full of Mac's together. Then many more hours of ganging up on friends. Good times...good times.
 
Worms and Lemmings - the only games that you'll ever need!

According to the toucharcade site a while ago, Hedge Wars is supposed to be coming soon, it's close enough to worms for me!

I have heard nothing about Lemmings, but I hope that someone makes it (even if they have to call it something else).

The only other one is 'Lux' which is a Risk game for OS X - I emailed the developers a while ago asking if they were planning it, and they replied saying that they were but gave no timeframe.

Arcade Game versions of:
Missle command
Centepede
QIX
Galaga
Xevious
Donkey Kong

Atari 2600 type games:
Fishing Derby - would be my first choice and my favorite of all the games!!!
Demon attack

I'd really like the Poker dice guys to come out with a version of Yahtzee that used the same dice rolling. It's crazy fantastic what they did with the physics on that game.

one of the best games EVER (obviously thats just my opinion, don't get all mad)
