For me it just intermittently works and doesn't work without any adjustment. Yesterday didn't work for 30 minutes, but then worked for the rest of the day.
Following solved the problem for me on iOS 7.1 and iOS 8.1:
Activate "Settings / Privacy / Location Services / System Services / Compass Calibration"

Simple answer. Worked perfectly. Unlike the rest of the people answering this question in this thread, You obviously know what you are talking about. Keep up the good workClick the compass in the upper right hand corner of the map.
That will toggle it from always showing due north, or showing the direction of your vehicle.
If that doesn't work, ensure location services are permitted for the app in settings.
I was experiencing the same issue, and this solved it for me. Location access must be enabled for Compass in Location Services.
When driving I usualy have my iPhone on with Google Maps open even if I am not using it to show directions to go from point A to point B. While driving the app shows a blue dot (my iPhone location) and as the car moves the dot moves but NOT in the direction the car is moving. If am heading south and making a right turn to head west, with the orientation pointing North, makes it look like am turning left. BTW, pressing the small arrow on the botton left of the screen does not change the orientation of the map.
Please read my above comment and let me know if this helped.Hope you got your prob solved..going through same prob.. any help..
