But what about real content like video too ? And looking at contrast/blacks/etc side by side?

Not just white screen comparisons..
If you know what you are doing, you can try to match the screen brightnesses between displays and then compare black levels / contrast. Off axis viewing and other metrics can also be eyeballed to a certain degree. White point can't be unless you are extremely experienced and know what a D65 white point should look like.
 
Yesterday returned mine. (10.5) screen was yellow with a white spot on the lower right side. After restoring my iPad icloud settings I wasn't able to use split view with any application except apple included ones. All together just was too much so returned it and waiting for the next year hardware revision, be a new iPad version or the same but with the screen bugs fixed. The difference between my actual iPad Pro 9.7 and this one was only the screen size, for the rest it felt the same, the screen color and tone is better in the 9.7.

I guess you have your reasons like you said, already being happy with 9.7 pro and fair enough!
