I don't see much difference between my M1 MacBook Air (400 nits) and M1 iPad Pro 12,9" (600 nits, SDR) display, given when I browse Safari or reading the papers. I'm quite upset about this. I was hoping to reach 1000 nits at all time (e.g. while reading out in the sun).

Has anyone found a trick to force the iPad to be brighter?

No, that's the limit.
