The microphones are not on when the phone isn't plugged in on older models. The M9 coprocessor makes it so on the S models.
It's simply not possible with the current hardware out today (without a jailbreak tweak)
It's probably a bug, because it doesn't work on my iPad. I can record it, but I don't usually post videos. What program do you guys use to blur or black out the personal information? I can try to make a video for proof. Again I just think it's Apple trying to make people upgrade because "older chip" can't do it excuse. Same with video recording with the original iPhone. Sure quality was horrible, but it was possible.Actually, I can corroborate this. This has happened to me on iOS 8. I had just unplugged my phone and was testing the Hey Siri feature and it still worked a few minutes after I had unplugged it. It's a bug.

I had the same thing on my 6+, I had been JB and installed the tweak for always on Hey Siri, later I updated the iOS and that removed the JB but for some reason the Hey Siri tweak still worked.Was

I never text and drive but I will Siri and drive because I can send/receive without taking my eyes off the road. Siri will read my messages to me, look up directions and numbers and it all works through the bluetooth connection in the car. Its a little slow sometimes but it works in place of taking my eyes off the road.Hey Siri... Buzz Off

I just recently restored the phone as new and did not load a backup onto the phone, doing this finally killed the tweak.

It might be possible to have it on, but would use up more resources than Apple would deem as acceptable on devices without more dedicated hardware for it.Very interesting, thanks for the info! Must be a switch in the system somewhere to do it that the tweak flipped and wasn't flipped back. Proves it is baked into iOS for any phone to be able to do it and just denied on a model by model basis.
Of course it is also possible to use a charging case and have it always on.
