Can I just ask, if I wanted a second hand macbook pro, and wanted a MINIMUM of 5 YEARS supported OS/updates, what would be the oldest I could consider?

So, you want support up to 2027?

A 2020 M1 MacBook Pro is a sure bet. I don't think that Apple will continue to support any Intel models by 2027, not even the 2019 Mac Pro. If was not for the Apple Silicon migration, you probably could have five more years of support with 2019 models.
