Interestingly, nobody has just 8 GB. I thought there might be a few.
I was monitoring my usage over the past week and it seems that 12 GB is fine for most of my heavier usage right now. Part of the reason it's 12 though is having Mission Control (and in the future, multiple monitors) encourages me to leave applications active even if for long periods I don't necessarily consistently use them. Only occasionally might I need 16 GB in the near term, and thus my choice of 24 GB seems like a reasonable one that will last me a very long time. Also, it seems like in terms of the bang-for-the-buck sweet spot might be 24 GB for most people, but lots of people will get 40 GB anyway.
As for those with 16 GB or 32 GB, I wonder how many of those are 21.5" iMac buyers, and how many are 27" models bought through the workplace.
BTW, my laptop memory usage is not surprisingly quite a bit less. It seems 6-8 GB is sufficient for most of my usage but having 10-12 GB is more comfortable (if that were an option).
The above is without VMs BTW. I never run more than one VM though, so if I were to start using a VM again (esp. now that I have semi-retired my Windows machine), you can add 4 GB to those numbers.

40 GB is the most popular, with 24 GB a close second. Those two combined represents 3/5ths of all votes.
I need 12 GB for my iMac, but 16 GB would be more comfortable, and 24 GB will last me a very long time.
I need 8 GB for my MacBook, but 10-12 GB would be more comfortable, and 16 GB will last me a very long time.
Add another 4 GB for a Windows VM.
