With a toddler having storage for lots of movies and books is a must to avoid lots of streaming on the road. 128gb minimum for me on iPhone 256 for iPad.
 
I was at the Apple store a few days ago and checking out the new 2018 9.7" iPad which, as you all know, only comes in 32GB or 128GB. All the display models at the store were the 128GB versions, and upon checking the memory they all had 23 GB already used.

I was going to just get the 32GB model because it would just be for eMail, video chat, and web browsing. I don't plan on adding more than a few apps nor using it for storing any music or video. Photos, yes, but probably not many. And $100 to upgrade to 128GB seems steep considering the overall price of the iPad.

But seeing how much storage space was used already on these demo models makes me worry that I might run out quickly with only 32GB. So now I'm not sure which one to get.

Just bought a 2018 iPad with 128GB yesterday and after restoring from backup and installing apps like Lightroom and Photoshop Express and having already downloaded 1,5GB of photos it still used only 13GB which is pretty good. Removed GarageBand and iMovie though...

Thanks. You mention that you removed some of the factory installed apps (GarageBand and iMovie) to free up space. How locked down are the iPads in terms of which preinstalled apps can be user-deleted?

You can actually remove a lot off the stock apps.
You only have to be careful with very few like Mail and Maps because that might cause problems. I also removed this imo stupid Clips-app.

I believe available storage is around 25GB without the pre-installed apps such as GarageBand, iMovie, Pages, Numbers, etc. My dad has the 32GB iPad 5th gen and he's got plenty of free space remaining (around 20GB?) after a year of use.

My ipad mini 2 only has 64gb...which is almost full. I take lots of pictures & videos so when i do get an ipad pro, i plan to get the 512gb version. I’m sure i could manage with 256gb, but the ipad pro will be my main computer for awhile, so i want to be covered.
