the 2nd picture you attached, simply change the bitrate of "dolby digital" to the highest rate possible. not sure what the DRC is either but put that to full notch
Someone has probably already said this, but you shouldn't need to run your DVD's through MacTheRipper or RipIt. Handbrake should handle the DVD decryption for you

It was addressed at the beginning of the thread and that's not true. Handbrake only handles the transcoding--you need VLC installed in order to handle the decryption.
Dynamic Range Compression. Recommended would be 0.0 - about 1.5. It boosts soft sounds like voices. This is not the same as gain which increases the volume for all sounds. HandBrake has no gain control.
