Update to my orginal post. I'm testing and running through the App store and have found nothing that I can't live without yet. The WWW is always better, IMHO. There are some nice ones though:

Tried a couple Weather ones and I do like some of them better than the standard Apple one, but the free ones were littered with ads and the detracts from the usability. I like what I'm beginning to see. I really want one that displays current weather info on the icon.

Google Search App is amusing. I feel like I'm Scotty in Star Trek 4. Computer? Computer? Transparent Aluminum!
 
With the constant always on 3G or WiFi I just go directly to the site, or the news, sports, weather, etc..

I just don't get it. Who's App hungry? What am I missing?

Dude, that's such a lame response. If you were/are a dancer and you met someone that didn't dance… would you say "Oh, it must suck to be you because you don't like to dance." … that's such a crappy attitude to have. He's not missing out because he chooses not to do something.

I don't drink but a lot of people around me do… am I missing out?

I have to say I'm pretty happy about being me, so no suckage yet.

bmstrong: I think you're very cool for being yourself and doing what makes you happy. That's awesome. I too only use 1 or 2 third party apps MAX. So many of the apps require a web connection anyway, so why not just use the web app and keep your iPhone free from the cluttered pages upon pages of icons on your screen.

That's another thing I wanted to mention. I hate having more than 2 pages of apps. The most I'll tolerate is 1.5 pages of apps (including Apple's apps). Web apps are neatly hidden in Safari's bookmarks menu and not cluttered all over your beautiful home screen. Still with me?

When the feature for saving webapps to your home screen first came out, I went crazy filling up as many home screens as possible to get all of my favorite websites on my home screen. This just made my iPhone look uglier. I didn't wanna see a ton of icons on my home screen when I can open up Safari and tap a bookmark just as easily. That's like having all of your Safari bookmarks displayed on your desktop… who would want that?

Anyways… I think that if you don't need to use the apps, then don't use the apps… it's totally up to the iPhone owner to do what they want. Just because the app store is there, doesn't mean you HAVE to use it.

By the way, you can turn off the App Store and iTunes Store in Settings>General>Restrictions If you don't use it, might as well hide it to clean up some visual space on your home screen.

I've downloaded over 600 apps since the app store launched and after going through all the cycles I've slowly started to pull myself back to the basic built in iPhone apps.

Only non stock apps I don't think I could live without as far as requirement for phone in no order are:

iSSH
1Password
Beejive

I actually just left tweekdeck tonight and setup twitter with the text app. Granted I'll still probabaly keep it installed at least for now. The iPhone has great abilities.

TomTom is nice too
 
Just some suggestions for the OP...

Here are a few apps I use pretty consistently:

Skype (Wi-Fi required) -- to make calls to friends on Skype, AND to make really cheap international calls - obviously US-based LD service is included in your minutes...

Urbanspoon - lets you find different types of restaurants wherever you are (if you're looking for Mexican, Chinese, or any other "type" of place.

eBay (when I'm actively bidding or selling something - great interface, much better than trying to go to the website via the iPhone)

PayPal (goes along with the eBay stuff)

Yellowpages - Have the entire US phonebook in your pocket - you can't tell me that's not useful :)

Quickpedia - Wikipedia on the go (if you need to look up a quick fact, it's right there.)

1Password - Password manager

Shazam/Midomi - Both let you "listen" to a song and they'll try to find out what the name is/who sings it. It's good to have both, because sometimes one program won't catch a particular song.

Hot Popcorn - On the go movietimes for your local theater - VERY handy if you're just in the mood for a movie. Fire it up, and find out what's playing when.

Logmein - Pricey ($30), but VERY useful app if you need to log into your computer when you're away from home to pick up an email, or check for some information (You wouldn't use this one, but I'm just including it for people who might be interested.)

Chase - FULL online banking on the go. Transfer money between accounts, check balances, pay bills...VERY handy and FREE. (I think most of the major banks should have iPhone apps by now.)

Doodlejump - VERY addictive (and simple) game...good for wasting a few minutes if you're waiting for something.
