It would be nice for Apple to come up with a mid-range headless Mac desktop. I would like to see them make one in a case reminiscent of the PowerMac G4 QuickSilver or MDD. Maybe make it more easily configurable when ordering online, and combine technology like an internal optical drive with the newer stuff like Intel Core i5 or i7 processors, Fusion or Solid State drives, Thunderbolt, etc.
From what I've seen though, Apple seems to be pushing the 27" Retina iMac towards professionals and power users, compared to the 21" iMacs. And why not? It comes with user-upgradeable RAM, a high-quality dedicated graphics card, and a 7200RPM hard drive or a Fusion drive as standard. It's perfect for intensive photo/imaging work on Photoshop CC or heavy-duty HD video editing on Final Cut Pro X. In fact, my college's TV studio is considering getting 27" Retina iMacs for their video editing lab, to replace the 2009 24" iMacs they currently have.
