I tried that. How am I supposed to know that just by deleting Cydia.app, all the OTHER files it installs in various places on the system are gone? I just want a jailbreak that installs ONLY OpenSSH.

Jailbreak, install Cydia, install OpenSSH.

Then SSH to phone as root and run:
apt-get remove cydia

Cydia is simply a GUI front-end for the APT distribution that Saurik ported for the iPhone. Without Cydia, you can still manage all of the apps available in any APT source (doesn't even have to be specifically for iPhone) with apt-get.

From the command-line: apt-get -h will give you usage information.

PhoneView does just what you want: let's you browse your iPhone's whole file system without having to jailbreak, using an OS X desktop app. It also lets you view all of your SMSs and Notes and save them to your computer, and even add new notes from the desktop. PhoneView is not free though. I bought it and can attest that it works great.

I actually have my iPhone jailbroken, so I didn't buy PhoneView for filesystem browsing. I mainly bought because I wanted full access to my Notes and SMSes from my desktop. The filesystem access was just a bonus.

I have PhoneView and you can only browse the WHOLE filesystem if you're jailbroken. Otherwise, you're restricted to /mobile/Media

Ah, you're right. I hadn't realized that, since my phone is jailbroken, but now I see that it says right next to the "Show Entire Disk" checkbox in Preferences that it only works on jailbroken devices.
