By higher end iPad do you mean the iPad Pro line or the iPad Air line?

Either way here are the advantages for me:

  • Laminated screen
  • Anti reflective coating (it does do better in areas with a lot of light)
  • 2nd generation Pencil (I consider the latest iPad Pros and Air)
  • More RAM
  • More powerful CPU
  • Better design (in terms of bezels and all that)
  • While indeed the speakers are better that for me is not so much important

In order of importance:
Very important: larger screen, speakers, USB C, RAM
Nice to have: 120hz, fast charging, pencil 2, fastest processor (they are all similar and fast)
Don't care: antireflective coating (I use a matte screen anyway)

I game little to nothing...

Apple doesn’t like moving parts so the higher end model doesn’t have a home button to wear out. Better camera also. Plus higher amount of space...

I went from a 2018 12.9” iPad Pro to a 2020 10.9” iPad Air. Things I miss:

- The refresh rate on the screen. I really notice the difference in scrolling smoothness in apps, especially Safari.
- The extra real estate. Certain sites I visit get far less on screen in landscape mode, which means I scroll more now.
- Sound volume. I put on music while showering, and the Pro easily competes with water noise.

Things I prefer:

- Touch ID. Especially now it’s in the power button.
- It’s significantly lighter-feeling, and thus more portable.

The Air has a newer SoC, but I don't notice the difference day to day. Any perceived speed differences are likely offset by the refresh rate drop.

If you edit, the iPad Air would be the best for a budget. The best one for editing would be the iPad Pro despite an older CPU. But if you don’t edit, the over advantages would be for certain things to load faster, more storage, and better graphics quality.

But why would you want such a big iPad?
Because some people don't just use the iPad like a couch device, like Steve Jobs showed 11 years ago....

The iPad 12.9 can even be small if you want a big drawing canvas, if you want to read a pdf newspaper without constantly zooming... if you want to read a power point presentation with lots of details without zooming and loosing part of the page, if you want to watch a movie shot in 21.9 (or even just at 16.9 for that matter), if you want to use your iPad as for reading sheet music, if you do video editing and don't want to feel cramped, I could go on and on but you get the idea...
Ah, and one last thing, some people want to have more than one size, some even want the 3 (mini, mid, 12.9) to always have the best size for the right purpose....

PS I didn't mention replacing a laptop on purpose (since iPadOS is still pretty limited for that), but if you really wanted to... even the 12.9 one wouldn't be particularly big as a laptop, on the contrary...

More screen real estate so I can enjoy that iPad goodness in all its glory. ??

One thing I don’t enjoy though, is the price that comes with buying the larger iPad. ?‍♂️?

Haha indeed, just for drawing I wish they'd make a 16" or even bigger iPad. Or something like the Microsoft Surface Studio. But I think it's too much of a niche for Apple.
