What about if I decided to do some 4k video editing in the future? Would i5-7600k still be powerful enough to do it without any lagging/stuttering? Is hyperthreading necessary for seamless encoding/rendering, or does it just help to speed up the time you need to get the job done?
Hyperthreading will assist with 4k video editing. I strongly advise you upgrade to an i7 if you decide to do that kind of heavy lifting. Some folks are suggesting 'Just wait, goodness is around the corner' - Apple typically does a Spring release for macs, and if you -can- wait for it, its worth it to wait, but if not the difference might only be marginal between this year's vs next's.

I agree early Summer 2018 is the safe bet for a Coffee Lake upgrade, just in time for everyone else in the industry to be looking to move to Intel 9th Gen/Ryzen 2.
