Now I have a clear situation on the storage options that I can choose from.

Probably I'll go with the USB-C SATA SSD enclosure + SATA 2TB SSD and, if needed, I'll do TRIM it occasionally by placing it in my old netbook and using a linux live USB.
It’s possible it (trim) would just work if it’s a single drive.

In one of my machines I use Softraid and it enables trim even on usb 2.0 connected SSDs.
It's a little expensive but you can try it free for some time (1 month).

Correction: usb 3.0 enclosure connected to usb 2.0 port (MacBook Pro 15” 2010 and cheap usb 3 enclosure)
