I found this post by a tech chap interesting there too.. It was in a reply to someone that mentioned new firmware for the MacPro's ATI 1900XT card..

"That's actually a ROM firmware update and is not a new OpenGL driver for that board. But in any event it is not the driver update that is needed to clear up these iMac(RadeonHD) issues. "

I did suspect as much.. Because if it was naff drivers, then Apple surely would have pulled the 1.1 update.
So it can only be GPU firmware now, right? So likely needs an update similar to that 1900XT card. Firmware..
 
Note that I limited the re-install to iTunes, and it appears to have helped quite a bit. No problems playing iTunes since the reinstall. I'm sure iTunes isn't the root cause, but my system is good enough to limp along until the Apple update at this point (patch or Leopard; whichever comes first). I'll keep my fingers crossed....

Quick update: Still no problems since the iTunes re-install. I've been running all my apps, including Aperture. Note that I never did have the strange screen appearance problems. Mine was limited to the freeze.
