My wife just uses eMail, Safari, Pages, Numbers, basically all the stuff that Apple bundles on the Mac. No video editing or any of that sorts. Watch YouTube...she not into social media garbage like me. So for her 8GB RAM on her MBA 15" is perfect. She did opt for 1TB storage. Lots of photos and files... So for her workflow, 8GB RAM is perfect.

I've just checked,
M3 iMac 16GB is £1,599.
M1 iMac 16GB is £1,359.
The difference is just £240.

Honestly, this difference is not worth it to get a 2 year older and slower machine.
Can you buy it via PayPal using 'pay in 3'?
Or use a credit card and pay it in instalments over 12 months, with just 8% interest?

I can also hook you up with someone who is an Apple employee and has a 17% discount on all products.
I'm an apprentice right now and I can apply for a card, which will give me the 10% education discount (£159), so can probably sort this out for you!

m3 16Gb for £1599 is one without touchID keyboard and extra ports though, I agree on that price difference, it’s frustrating that Apple do that, but the touchID is a definite
