I'd be curious what sort of folks would want/need a Xeon inside of an iMac. Would it be for video editors? As a web app developer/photographer the core i7 is good for me. As most apps I use including Photoshop really don't take advantage of all the cores.
I do dabble a bit in Final Cut Pro X but I'm not editing huge 4k files.

The iMac Pro will be in ADDITION to their regular line up. It will have a XEON Processor with 6 or 8 cores and ECC memory. The biggest question let is which graphics chip? Would they be so bold as to go Nvidia for this pro machine? Unlikely. Or dual AMD chips somehow? Or at least an AMD 495X with 8GB graphics RAM? External graphics are now possible with TB3. Will Apple offer their own external, upgradable solution?So are they going to keep 21, 27 regular imacs?
If so it can start with Xeon 16GB ECC and hopefully a desktop gpu. Maybe not upgradable but maybe a 1060 shrunk down for the imac. Then go up from there. Maybe offer radeon pro and quadro, but start with 1060 & 1070.
And yes custom LUTs. Wonder if they could add in a option for xeon e5 6 cores? Then just stop there.

I have a feeling that the iMac Pro and the next Mac Pro like the 2013 Mac Pro will be mostly a bad deal for musicians.video describes it as a "low volume, built to order machine".
So no, the iMac Pro will not be like that.
As a pro musician using Cubase and running loads of virtual instruments and fx plugins live, I have absolutely no need for a blazingly fast and expensive GPU.
Put a 6 core i7 in the current machine, with space for two hard drives and the Pro Audio market would be sorted.
