Have you looked at School Notes Pro (Free for the time being) I downloaded it but did not get a chance to play with it before I had to take my iPad back :( (Horrible Wifi issues). My buddies iPad did not have the same issues, so just waiting on the replacement to arrive...;)
The only thing I don't like is that there wasn't autocorrect for spelling. I didn't look deep into the app, so maybe it was just off.
 
Don't forget it has a voice recorder. Also I find that taking notes right inside an email works fine and saves automatically.
 
I do not allow laptops in my meetings unless they have a presentation to deliver or content that needs to be projected. The amount of time I see people downloading and responding to email beggers belief and I'd much rather they concentrated on what was going on in the room.

Pen and paper it is.

It would be really nice to be able to write notes with something like the pogo stylus and an app that does handwriting recognition.

...And as a matter of fact, Apple has the best hand-writing recognition algorithms in the industry. Were it not SJ who killed the Newton, I suspect that one of the built-in apps would do exactly what seems so natural for iPad: take notes and use a stylus of some sort to draw graphs, network flow diagrams, etc. It is an irony....
