I'm just seeing this thread now. I've had a litany of settings (email alerts, apps, etc.) randomly reset on me as well. Glad to see I'm not alone! Hopefully, 10.3 fixes the bugs.

Yep system settings like ringtones are being reset as well something is wrong
Happened to me about a week ago as well. A bunch of system settings were changed! Ring tones, message tone, etc.

I also experienced some changes that were spontaneous

-prompted to ask send "read" receipts
-phone started vibrating when it has always been on silent
-battery percentage randomly disappeared

And who knows what else I'll find out. It first occurred yesterday for me.

Thoughts?
Same for me too. Wtf

Did you launch one of the Ios stock apps like health or calculator. Thats what happened to me, the settings changed after I launched those

Not really. I just noticed many settings changed. Ringer, message tone, battery percentage and many more! Weird. Only on my iPhone 7+. iPads remained unchanged.

All of the above have been happening to my iPhone 7 256gb as well. Battery percentage gone, YouTube acting like I'm running it for the first time, bank apps, insurance, etc., forgot all login info

Do any of you guys here have restriction enabled? Mine is enabled all the time and never see such reset behavior.
