Is there a widget available that would show me all my reminders, not just scheduled or overdue? I prefer to use the stock reminders app, but if a third-party app synced with the stock app that would work as well.

You can try Reminder: Widget+, Reminders Widget, or perhaps OneList.

So just to confirm, the expected behavior of the stock Reminder widget is to only show reminders that have a due date? I ask because I was trying to view a simple grocery list on the widget screen but could only get them to appear if each item had a due date. Frustrating.

Yeah, the default Apple iOS Reminders widget is basically there just to display reminders that are due it would seem. You might want to try some other (third party) reminder widgets, like those mentioned in the post preceding yours.
