Install Xcode, connect your iPhone to your Mac, then a Developer section will pop up in the Settings and there you can enrol the AirPods in the beta.

Looks like captions on audio messages on Messages app is not working yet. Maybe in an upcoming beta? (On iPadOS 17 at least, haven't tried iOS 17)
It asks me to download an update on Mac when I do. Are you on Mac beta as well?
IPSW file Update
Had to download Xcode and open up 'show package contents' on the app, then go to Resources, Packages > MobileDevices.pkg
Install that so your Mac can talk to your device, then I've been able to update my iPad smoothly to ios17 from Finder, option + check for update, then manually select the ios17 IPSW file.
I don't have a Dev account assigned to this iPad. No change. Same as iOS 16.6 by the looks of things.

However, as I posted earlier, you don't need to actually do anything, as the first time you get an SMS with a verification code in it, you'll be prompted to change the setting then.
So it seems like the biggest bug is the new download system doesn’t work. Some people are getting the beta who are not developers. I am getting it logged into the wrong Apple account.

Have just installed iPadOS 17. Something I noticed and maybe never mentioned here:
- Old iOS 3 wallpaper returned to iPad
- No iOS 16 wallpaper is present
- Astronomy wallpapers seem to have improved quality
- In 'Software Update' section in the settings app 'iPadOS 17.0' wording is now bold again, how it was previously in some betas of iOS 16
