That is the issue for many Air users (and maybe more than just Air); Resolution has vanished as an option within the Camera app (photo).

Do you have the setting that displays this option enabled? It's in Settings > Camera > Formats > Resolution Control and ProRaw. That's also where you select the default format and resolution. The option to enable the AppleProRes activation menu for video and choose the log format for the capture is also there. I have everything enabled and I activate what I need directly from the camera interface.
