You could do that by tapping and holding the screen but it wouldn't say "AE/AF Lock". So, kind of new?

When using App Switcher, the live preview is actually live. Leave your camera running and go to the switcher and you can still see the movement.

It will even let you still take the picture using the Up Volume button.

When opening a folder, has it always zoomed in on your background slightly? Not sure I've noticed that in past betas.

Both of those have been there since the beginning of iOS 7.

Yes: Settings - Mail, COntacts, Calendar - scroll to the bottom and there is Short Names, which is configurable and switches the names also in Messages.

Open up iMessage and go in to an actual conversation with a contact that one has a nick name for, and the top bar only shows their nick name.

thats true usually i get 3 dots in my room but now im getting 5 dots.
