This is inaccurate information. It wholly depends on needs, but also the processor's are so powerful now they should last a good chunk of time. This past summer I just upgraded my mom from an iPad 2 to the 2018 iPad. That's a 7 year iPad; now granted she wasn't using it every day and mostly just for very light things like email and netflix, but it just shows the longevity that is possible.

This is what I would mainly use it for.
Streaming, office, web surfing, eReading, and too numerous education apps. Many of the apps they show us at my school district, have Apple support rather than Android.

I would want to try drawing on it, just to see how well it functions, and eventually learn to draw better.

So based on this info, which is a better fit? iPad (2018) 128GB or iPad Pro 10.5' 256GB?

I think you'll be happy with the 2018 iPad. It will certainly be sufficient for your use case. It's longevity will be slightly less than a pro (due to a less powerful processor), but at half the cost you will get more bang for your buck (even if you decide to upgrade a year or 2 earlier than you would have with the pro).

While its certainly true that some devices will last several years their usefulness can be a subjective thing so I can see why akash.nu noted to dial back expectations despite not qualifying the statement. Take Netflix for example, where new Netflix users of older iOS devices that are forever stuck on iOS 9 have to resort to roundabout ways to install older versions of the Netflix app because the app now requires iOS 10 or higher. It won’t be an issue if one never has to reinstall said app but the point is that despite the longevity of a device sooner or later software support for it is going to fade regardless of how powerful it’s processor might be to the user.

I think just buy ...
apple because apple didnt announce any ipad or macbook leak , and iphone event they dont event talk about it >> look like people hope mini 5 or macbook air will take forever,

Of course it depends on the needs. I mean you can use an iPad as a digital photo frame as well and probably a first gen iPad will be able to handle that without any issues. But in a typical day to day usage scenario, more than 4 years is really unrealistic.

The iPad Air 2 came out almost exactly 4 years ago. Sure, it's not top of the line anymore, but it's more than adequate for the OPs needs of
Streaming, office, web surfing, eReading, and too numerous education apps.
In fact, with iOS 12 the Air 2 should do even better. Additionally, I would expect it to get iOS 13, at minimum, with iOS 14 and 15 real possibilities. That would guarantee the ability to run for at minimum for 6 years on the current OS.
