Oh good, would be just like Apple to artificially limit those features to the iPad Pro. Think the multi-tasking features and MacOS-style Dock will finally have me updating from 8.4.1.

I'm confused by this comment. The only limitations I can recall were done specifically because certain hardware was required to allow those features to have anything approaching reasonable performance (i.e. not artificially limited).

I had a weird issue with charging on my iPad Air 2 (iOS 11 beta 1). I tried to charge it with the charger that it came with and with an Apple cable. The iPad said that "this accessory might not be compatible" and it became really slow. I have charged the iPad with that charger + cable combo up to this point without issues. Using the same charger with another Apple cable works just fine, though.

Same, with any and all my chargers and cables. Have to charge from a Mac. IPhone 5s in the same beta doesn't have thus issue.
 
I believe they meant using them all at once where you can interact with all 3 and not have any grey out.

Ah! I've just tried it and it probably depends on the apps. I HAVE been able to interact with all three at one point but not at other points. Air 2.
 
So far so good. Smooth as butter . Performance same as IOS 10. Installed it today on my Air 2.
