Can’t you export this data in any way?
If so you could export it to iCloud/Dropbox and import it again, just for once.
If the apps provide no way of exporting/backup it’s time to move away from them.
There are also usb/lightning sticks and WiFi drives that allow backups/copies to them, but even then you would need to be able to export from the apps.
 
Just a few thoughts.
1. 96% is not uncommon. When I have my iPad Pro 12.9” (1st gen bought when it came out) on power for days on end, it will charge to 96% and stay there. If it’s been out for the day and it is down to 20% it will charge to 100% again.

2. The power adapter might get hot. Really hot when it is charging at full power. I have had it many times, it still worries me, but I haven’t damaged one yet with it. They seem to be ok with it.

2.b. If you want faster charging, buy a 29W USB-c and a USB-c—>lighting cable. Bloody expensive, Bloody fast charging. If you use a 12W charger it might discharge faster under heavy load then the 12W can charge. I certainly thin that on the 12.9 the 29W charger should have been standard. Both the 10.5 and the 12.9 now can fast-charge with the 29W. I’ve bought 3 of them (two at home for charging both the 12.9 and 10.5 and one for quickly topping up the road).

3. It really looks like something on your device got stuck. It’s almost always something software related. It’s almost always some app that does this.

4. With your new iPad, restore it, use it like you did before.

5. If you get the same behaviour, completely erase the iPad, restore to factory settings and don’t start from a back-up, just download any app again from the App Store, just like you’re a first time Apple user. Usually iCloud data doesn’t effect it, but all the settings, from mail, apps, reminders, localisations services etc. Etc. Should be entered again. It is a pain in the proverbial place, but might be the only way to get rid of it.

My experience with Apple has been great so far, but I think your phone support experience has been substandard. Part of the problem is they keep extensive records of your device/case and when the first decided it was a software problem, you’re basically stuck with this.

I seriously hope this new device will solve your problems. the 10.5 is a wonderful device and IMHO the best tablet there is!
Full sized keyboard according to my fingers, super nice screen, ProMotion, huge disk size (512Gb) 4Gb ram, really bright, good battery life (when you don’t put it on 100% brightness :) ) blistering fast and big enough to write well on. Just like the paper notepads I used back in the days.

Charged to 100% very fast with the provided charger, no problems (and it isn't so hot that i can not touch it). Lost on 1% during the night, about 10hrs. As apposed to 30% with the former iPad Pro.

I've also had no problems in the past, i'm a long time user of the products. I have had amazing support when I have been in to the store, I would always prefer to go to the store but it isn't always that convenient, my local store is about 1 hour away. About 6 months ago it was two-day train trip away or 8hrs if flying (including travel to and from the airport).

Cloud backup and restore is always going to be a problem for me. I can be away from the internet (good and stable) for 6-8 weeks at a time. But i will look into it considering the iTunes Backup and Restore process seems to be weak and failing for most people.

What do you mean by iTunes backup & restore is weak & failing?!

A few users and even Apple recommended setting up the new iPad Pro 'as new' and not use the 'Restore from backup' option. That's why i'm thinking its a weak option.

A lot of people seem to prefer backing up to iCloud, however this won't be a viable option for me because of the lack of a reliable internet service (and lack of an internet service) and because some of the Apps I MUST use don't back up to a cloud service.

It's not really a weak option as such but backup corruption is a normal phenomenon in software industry. For the most part its absolutely fine. That's why people suggest that if you experience glitches after restoring from backup.

A lot of people seem to prefer backing up to iCloud, however this won't be a viable option for me because of the lack of a reliable internet service (and lack of an internet service) and because some of the Apps I MUST use don't back up to a cloud service.

This also is mostly because people can't be bothered with physical backup and when you use iCloud backup, for the most part the apps get downloaded again from the AppStore anyway.

Even on an iCloud backup only the app data is stored on cloud with some sort of hook linked to the actual app that the data belongs to. So when the app gets downloaded again during the restore process, the data can be restored within specific apps without user intervention.

For the most part this works, but I've seen apps that do not retain data as well, it all depends on how the app has been developed.

My past job is in software, specifically SaaS, but it's been a while since i worked in the industry, so cant be sure what developments have been happening.

What you say makes sense, a backup, if corrupted, will be corrupted whether in iCloud (or other service) or on the Computer. However i can't be sure that iCloud doesn't do something magical that isn't available on the iTunes backup, having never really used the service. I make a lot of electronic music using the ipad and this passed experience has given me an understanding about some of the Synth and fx plugin apps that i use, many of them will save the sounds but wont actually save the program settings.

Anyway, the new (new) iPad Pro is working like a dream now, no battery issues, it will charge to 100%

How much percent battery life are you losing overnight now?
