After further looking at the sim tray, I can only put the nano sim in the front sim spot. The bottom will not hold a nano sim. (To small)

So not sure why the Apple rep in Canada stated two physical sim sockets for Canada. He/she was mistaken.

Last Sunday I was observing my local apple store staff training through the window prior to store opening. They had a briefing and then a multiple choice quiz with a live poll system. While most questions were answered correctly by 90% of associates, every question had a few associates who answered incorrectly.

You unfortunately were talking to one of those associates. Apple has been clear throughout that all non-China markets will receive dual setup consisting of one E-Sim and one physical sim.

I'm just annoyed that after finally getting all the North American carriers to a service offering (GSM/LTE) that doesn't require the carriers to be part of the process of switching from device to device, and now we have eSIM that once again makes me wait for the carrier to OK the step, get in the way and delay my use of the phone of my choice. I know Apple wants the real estate for other hardware but in this case, to force it in the US when the same physical device has the possibility and we can't use it is unfortunate.

Went back to the Apple store today and confirmed that what he said was not true. It’s only a single sim tray with e sim.

I’m wondering if the iPhone XS and Max are the same phone. If someone could use the dual sim tray in the non China version would it work? As the beta firmware is the same for both versions.

Exactly my thinking. I can see what look like SIM contacts on both sides when I look into my US XS Max... it couldn’t be that easy, I’m sure.

My original thought when I heard Apple was finally releasing a dual sim tray phone was to buy it in China since we may have similar bands here in Canada. (I’d have to research) I still may go this route as Telus doesn’t support e sim yet. Just have to make sure bands work and that it has English.
First I’m going to check on getting one of the dual sim trays from China.

I wonder if ifixit has anything on this? Maybe some pictures?

Definitely not.

The tear down of the Max clearly shows only set of sim contacts.

If it were as simple as that, Apple would have included dual sided SIM trays in every new iPhone.

Also keep in mind the China/HK/Macau XS Max and the XR are the only 2 that can have the dual SIM tray. The regular XS, even the China/HK/Macau version, does not support dual physical SIM.
