That's cool just Filevault should be on every Mac, and this doesn't rename the disk correctly, it's all just a little messy.
If you want to make reinstall a little easier, turn off FileVault before you do the reinstall. and then follow my original post instructions. Once you get Big Sur reinstalled, you can turn FileVault back on. Once you have finished the install, go to disk utility and rename the 'untitled' disk to Macintosh HD or whatever name you wish to use. That is the simplest way to go about it, in my opinion.

so what is the way now for an actual clean install, where original user files are removed? Do I need another Mac for DFU?
As @Apple_Robert said you can do "erase mac" feature and that's all.
By the way, I also disabled FileVault before a complete re-install and enabled it during setup.
I believe soon we'll see how we can do this in iOS now - reset all settings and data by one tap in settings.

They said in platform’s state of the union that multiple macOS versions s as side by side would be possible. Don’t see that yet either.

I want to perform a clean install of my m1 MacBook Air as I set it up with migration assistant when I got it and think it’s causing some issues 😒 But it’s a work computer and I’m worried I might brick it from reading about the many issues.

I currently have FileVault activated. Can I just deactivate this and then expect the “normal“/Apple-recommended procedure to work?

Yep supposedly.

iOS uses disk encryption. Don’t have to disable that before reset. It’s a mess.
