Why do you say so? It is bigger!
People buy 17" laptops, and let me point out, what you and I may think is too big, others may feel its a perfect size. One size doesn't fit all, and depending on the need the 16" MBP can be an excellent solution.

Im gonna be using it with design apps (Illu, Pshop, Indesign). Im not gonna be using it in many ext displays, just one at my place ;-) but when im away from home i do wanna be able to design in it.

You can set them to display more own the screen which is a good solution for the 14" if you re ok with everything being smaller.

Its in System Preferences. Choosing 'More Space' makes everything smaller so more fits on the screen.

Photoshop window maximized to 'More Space'. The palettes and UI elements are reduced in size. It's not a huge difference, but every bit helps.

Regarding the M1max and pro chips that accompany the 14" and 16" MBpros, is it known that there will be an equivalent M2 chip to come?

There will always be a Pro, Max, and Ultra chip to go with the regular M# chips. The new MBPs are rumored to come out Novemberish and they will probably be M2-Pro/Max with a slight chance of M3-Pro/Max. If they are M2, there wont be huge power gains over the M1-Pro/Max, and there will probably be a price increase too, so the smart money is on getting a discounted M1-Pro/Max 14" or 16".
