As others have said, the biggest difference for your intended use is more RAM, not higher processor speeds or more cores.

Best benefit of the M1 Pro would be the 32GB RAM, but a new M2 Mac mini might allow a 32GB RAM capacity...?

Like M1, M2 basic will be limited to 16GB.

The vast number of people who buy the air would be satisfied even with 8GB. Keeps the entry-level "inexpensive".

Anyone who needs more than 16GB will know it. Apple is rarely shy about making them pay for it (force them to buy a M2 Pro and up to get it).

Until the M2 is introduced we know nothing of the maximum RAM configuration. It’s just pure speculation at this point.
Apple is historically terrific at knowing what their customers will pay for and not leaving money on the table.

People who need >16GB memory won't flinch at the Pro/Max/Ultra tier.

I am finding out that I need it, but I definitely flinch and curse at Apple for their outrageous memory prices.
